does anyone have any simple knits that i can give my parents for their 25th anniversary?

Are you looking for flat knitting?
One thing you could do is knit some heavy worsted wool on large needles, a set of oversize placemats. Then felt each until they come out the size you want them. A little blocking, et voila. You could even work it in any of a bazillion dishcloth patterns prior to felting for an interesting texture.
The gift is simple, quick to put together, and an individual work of art that shows your connection to them.
I'd look for 100% heavy worsted, aran or bulky weight wools that are not listed as "superwash". Superwash yarns will not felt.
Good choices are Noro, Cascade 220, Malbrigo, and Manos del Uruguay.
