I'd like a simple pattern for a knitted headband (?) to wear when walking that isn't too wide, but it will cover my ears. I don't like to wear hats.

Make one up.... You can do one int ribbing, garter stitch, a drop stitch, or use any scarf pattern only half the width....

You could use the hat band portion of A Touch of Whimsy hat (http://whimsicalknittingdesigns.blogspot.com/2006/10/touch-of-whimsy-hat-pattern.html).
If you want something much simpler, measure your around your head and subtract about 5% or so for snuggness and then knit to that length and seam it up. If you don't want a seam, use the provisional cast on and then kitchener the ends together.

Lion Brand has one on their free pattern section called "Hot hot hot ear warmer" or something similar. For some reason I can't get lionbrand.com to load right now (dang wi-fi!) or I'd link you. I used Tiffany, which they recommend, to make one, but I also used another brand of fun fur to make it for a child. Not as stretch, but still cute!
