You could try a dishcloth. This site - Dishcloth Patterns (http://www.jimsyldesign.com/%7Edishbout/kpatterns/knitting.html) - has pages of them in different patterns. Some are lacey, some are textured. That would give you some practice and if you don't want washcloths, you could sew a bunch together for a blanket.

you could try a hat - quick and using increases and decreases

or Calorimetry - very quick and cute but check the threads here for advice on cast on adjustments

I say jump right into anything you want. Don't be intimidated! Is there something you want for yourself? Or to give as a gift?

I'm a newbie knitter! I first started a scarf that was only blue and only in a knit stitch. I was bored after about 15 rows. I put it away and started on a super hero cape for my son. Anytime I came upon a stitch I didn't know I watched the videos on this site (yes sometimes more then once). If I didn't understand what the pattern called for I posted a thread for help.

So if you see something that interest you...go for it. Dive right in!
