Didn't some knitting designer knit a sweater in about an hour on Letterman? What about just wrapping up the yarn and needles and telling her you're going to make her a hat that will be delivered in a week? Or a card with "a hat with your choice of color, to be delivered next week" or something along those lines. Or if you have a spare crochet hook and some yarn to give her-- she might love to learn how to make a chain. . .

I don't, sorry, but could you use an adults and lop off a few inches? A hat patter I have gives an adult woman's head measurement as about 20", a toddler as 16" and a child as 18". So maybe an adult woman's pattern minus 3"?
