Here's a hat I'm working on. Since I took this pic (I didn't get around to posting it, I've gotten about 4.5" past the end of the ribbing and I've only a few feet away from the end of the first skein.

The yarn is Patons Shetland Chunky Tweed Charcoal, #10 needles, and the basic hat pattern is from Ann Budd's The Knitter's Handy Book of Patterns.

You may note that my "right side" is on the inside of the "tube". I know I can flip it inside-out.. should I do that, and knit on the "outside"? Or do I continue as-is and flip it when I'm all done? (Or does it matter?)

Lookin good! I think its pretty much preferance and what works best for you as far as if you keep the inside out, etc. Go with what works for you. I do mine the otherway with the outside facing just cause I like to see how its coming alot as a whole, but really, from what I understand its a personal preference. Keep up the good work!

I think at this point I'd just continue and flip it after, but I'm not sure. It's looking good though!

I don't have a needle to sew off the top with! Otherwise it's done.

It's my first completed piece.. I did a couple proto-scarves to practice, but I abandoned them in favor of something I could finish faster.

You don't need a needle to sew up the top. You can pull a short tail through the sts on your needle by using your other needle. Insert like you're going to knit, but pull the tail all the way through.
