Can anyone give me advice on how to cast on mid-row. I'm making a baby sweater with pockets and I just cannot figure it out!!

Use the knitted or cable cast on. At the point you need to CO, turn your needle and put it in your left hand, CO the sts, and turn again, put in your left hand and finish the row.

A lot of people also use the backward loop CO. It's harder to knit into, but it's fast and easy.

I find that backward loop isn't so good for more than a couple sts because when you knit into it the yarn stretches out and leaves a lot of slack. One way to overcome that is to CO one less stitch and make it up out of the slack yarn.
