If you don't mind paying a few bucks this site has awesome, easy to read and understand patterns.

You didn't say if you wanted boy or girl so here's a bunch to choose from. Most are free.

How about a larger version of the baby surprise sweater? If you work it with worsted weight or aran yarn with larger needles you could get a sweater big enough for a three year old.

I really like Wendy's Drive Thru (http://knitandtonic.typepad.com/knitandtonic/2006/11/drive_thru_aka_.html)...you can make it a pullover or a cardigan...it's very easy and the pattern is written very well...you could do the color or just a solid...although the color in this sweater is very very easy :happydance:
