You guys are gonna kick me outta here but I was wondering what knit even means in this pattern http://cache.lionbrand.com/patterns/kmm-wristlets.html

It means you will knit all the way for 8 inches (no purling on the wrong side).
"Loosely cast on 30 stitches. Work even in garter stitch (knit every row) for 8" [20.5 cm]. Bind off."
Actually what "work even" means here is to knit 30 stitches on every row without increasing or decreasing until you have worked 8 inches of garter stitch. So the "even" refers to keeping the same number of stitches on your needle.
That looks like a nice pattern. Let us know how they turn out!
