Of course it would work. That's how patchwork blankets probably started. You could be traditional and make all the squares the same size, or you could step outside the box and make lots of squares of different sizes and fit them together however looks best.

there's a great book called 200 knitted blocks by jan eaton. there's knit purl combo squares, lace, muti colored, solids, it's knida of a choose your challenge thing. and it's written so that using the same weight yarn and same needles the squares should be very close to the same size.

Whenever you want to try a new st pattern you can try it out with your squares concept and at the end of the year you can sew them together to make a blanket. Call it your learning blanket. It would have memories attached to it and have that much more meaning. I am going to work on this for next year starting in August. Then by next fall I will have a new blanket. 2 sq/month = blanket:cheering:
plus i will use stash yarn and kill 2 birds with 1 stone...:happydance:

Here are some places to find different sts:

What a wonderful idea and thank you for the links. My 8 year old is practicing her knitting too so I think we shall do this together

Yes -- I've had the ladies from our church's Compassionate Crafters group practice their skills by making 6" squares. Now we are practicing another skill by sewing them together into lap robes & baby blankets.
