In the pattern I am working on it says:

K7 sts, place marker, work Row 1 of Chart 3 over next 50 stitches, place marker, K7 sts.

Working first and last 7 sts in St st and sts between markers in pattern as established, work 1 row even.



I get how to do all of this, but my question is what does it mean when it says work 1 row even? Surely it doesn't mean just work 1 more row because if it did, why would it not just say that? Does it mean to finish out the whole chart? There are 11 rows in the chart.

It does just mean to work a row. 'Work even' is generally used in patterns to mean work in the st pattern without decs or incs.
