When making hard boiled eggs, I gently place the eggs in the bottom of a pan and cover them with cold water. I bring them to a boil then turn off the heat. I leave the pot sit for 15 minutes then drain the water and cool the eggs off with cold water from the tap. The cooked yolk is nice and yellow and not that ugly green color.
