This book has patterns that are all knit stitch.
The Knitting Experience Book 1- The Knit Stitch (http://www.amazon.com/Knitting-Experience-Book-Knit-Stitch/dp/1893762130/ref=pd_bbs_sr_1/102-3177256-7597741?ie=UTF8&s=books&qid=1174189927&sr=8-1)
You could use this pattern to make a scarf, dishcloth, placemat, etc..
Garter Stitch cloth (http://www.jimsyldesign.com/~dishbout/kpatterns/grlace.html)
Garter Stitch Shawl (http://www.royea.net/gartershawl.html)
Garter Stitch baby cardigan (http://www.knitlist.com/01gift/garter-baby-cardigan.htm)
Garter Stitch bear (http://www.bevscountrycottage.com/buddybears.html)
Garter Stitch top (http://www.craftyarncouncil.com/projects/august98_knitproject.html)
Many of these will have increases and decreases for shaping. If you truly want to do nothing but knit then you'll have to stick to scarves, dishcloths, and things that don't need shaping.

Also, many patterns that are knit in the round are all knitting -- with increases and decreases, as Jan said. Hats, wrist warmers, bags -- there are a lot of things you can make and still avoid purling. :D
