By far Vogue Knitting: The Ultimate Knitting Book is my favorite knitting book. It is has everything in it. No matter what I am trying to do, there is a section in the book on how to do it.
Here is a link to it on Amazon.com:

Hope this helps

The Knitting Handbook by Montse Stanley has everything you could ever need and everything you might never need but could be useful to know anyway ;)
I highly recommend that book.
