Sounds like you've got a case of overcrowding going on there - too many stitches crocheted will mean that your edges will not lie flat.

Pull out the crochet edging and try again with less stitches.

It used to be, when I first taught myself to crochet, that I would wrap the yarn around the hook. It took a while but somehow I transitioned to moving the hook rather than the yarn.
