Smile Difference between circular needles and straight needles

I'm confused on why you would knit with circular needles. Do they have a special purpose? What kinds of things can you knit with the two types of needles? I was just wondering the difference.

I have no idea what I am doing wrong. I don't see how I am doing it any different than the video, but there are long strings between each row of stitches. Any ideas? I am using long tail cast on.
