This is my FAVORITE Vegatarian THANKSGIVING Recipie. I was a vegatarian for many years (I eat chicken now) and made this every year to replace the turkey.
Carrot and Cashew Nut Roast
1 medium size onion
1-2 cloves garlic crushed
1tsp olive oil
2 cups carrots cooked an mashed
2 cups cashews ground
1 cup whole wheat bread crumbs
1 tbsp light tahini (sesame paste)
1 1/2 tsps caraway seeds
Juice of 1/2 lemon
1/3 cup stock from carrots salt and pepper
saute onions and garlic til sofe
Mix together with other ingredietns
place mixture in greased load pan
cover with foil and bake for 350 degrees for 1 hour
remove foil and bake for another 10 minutes
let stand in pan for about 15 minutes before turning out
slice like meat loaf
good hot OR cold!!
