Here is one more (I had to go find it). I use a lot of ground nuts for Holiday meals (too lazy the rest of the year).
Mixed Nut Balls
2/3 C ground almonds
2/3 C ground hazelnuts
2/3 C ground pecans
3/4 C sholewheat breadcrumbs
1 cup cheddar cheese grated
1 egg beaten
4 tbsps sherry
1 small onion chopped finely
1 tbsp grate fresh ginger
1 tbsp fresh parsley
1 small red or green chili pepper chopped finely
1 medium red pepper diced
1 tsp salt
1 tsp ground pepper
In another bowl mix beaten egg with sherry onion ginger and parsley chili and red pepper
Combine with nut mixture and add salt and pepper
If mixture is too dry add a little more sherry (you can use milk instead)
from into 1 inch balls, arrange on a well greased baking sheet and bake for 25 minutes at 180-200degrees until golden brown.
I make aplate of these and several bowls of dipping sauce; honey mustard; ranch; marinara sauce etc.
