I would do one row of single crochet and then begin my edging pattern. You should be able to do any edging with just one foundation row of sc. You might be picking up too many stitches. When you use the cast on or bind off stitches I would suggest doing a one to one ratio of sc. In binding off if you use the crochet bind off then you will have the stitches you need to begin with a row of sc or start your edging right then. I use different binds off but the crochet would probably be better for you if you plan on adding an edging. As for books there are plenty on the market. I would suggest you look around until you find one you like. I have many and some are even in Japanese but the patterns are symbol patterns.
