It will change it some. Garter stitches are basically square and stockinette stitches are narrower and longer. You will have to compensate.

A regular swatch is a good idea. But to get an idea how different they look also cast on say 20 stitches and just do garter. Now cast on 20 stitches and do stockinette for a couple inches. The garter o e is probably bigger.
