Easy is a relative term. I find them pretty easy. If fit is what you're after, try Lifestyle socks, skip the pattern, and go straight to comfy socks.

This site has a video for casting on for the toe (no grafting!), there is one for doing the heel, and a bind off. You can make a sock with just these to show you how. Between the toe and heel it's just knitting in the round, above the heel it's knitting in the round, probably you'd do ribbing.

There are other cast on and heel methods too. You can customize your socks to suit yourself.
