I think it's wonderful that her school is offering a knitting class. I homeschool my eight-year-old daughter, and I taught her to knit last year. She loves to knit, cross stitch, etc. ...And I just love to watch her create. It's so fun to see them using their hands to do something "timeless" (rather than watch t.v. or play on a computer). :D
