Double pointed needles aren't that hard.. the first two rows do feel like you are wrestling w/ an octopus.. but, after that things fall right into place. I find using 5 needles to be easier than 4.. things rest in a circle better for me then.
I'm sure that circulars would work- the only problem would be.. do you have a tiny/short circular? Since, you wouldn't be using a lot of stitches.. you'd have a hard time making just one circular work. :D

YOU could also just knit it back and forth and sew it up. Just cast on an extra stitch or two to make up for the lost s titch from seaming it together?
