No, Fair Isle is best done in the round. It shouldn't be hard on socks as long as you don't pull the strands on the back too tight. It's not as stretchy so you'll have to take that into account if you do a lot of fair isle on it. If it's just a little band or something it shouldn't be a problem.

I used the two handed method and this is where I learned how.

Oh and for the record Intarsia is best done flat.
