I'd recommend a yarn that's fairly smooth so you can see what's going on! A lighter color might help with that too. My sister just started knitting, and she chose a simple knit 4 purl 4 pattern. The only problem was, her yarn was chunky and loopy (boucle) so she couldn't see the pattern, dropped stitches, etc.
