OT: Use in place of LEEKS for chicken stock???
Helllp...no leeks were to be found at the store, and I need to get busy on my stock. I have tons of celery, carrots, onions, garlic..etc. Here's the recipe I'm using. http://www.marthastewart.com/page.jh...&id=recipe1984

Denise, I have used sweet onions or scallions in place of leeks in the past. Good Luck! Happy Thanksgiving!

Depending on your taste, you might want to use less onion than the amount of leek the recipe calls for...leek is a much milder onion taste than regular onion.
