can you..... Really?!?
i am going to knit a blanket using the proper needles for the yarn i have chosen. My question is can i knit on enough stitches using 14" needles for a 60" blanket? Or must i do it in parts?

14" needles will be too short. A better way would be to get a circular needle and use it like flat needles. I think a 40" circ should do, a longer one would allow you to spread out the stitches so you can see your work better.
