carrying the off color yarn when illusion knitting

I'm very new to knitting but would like to try an illusion pattern such as DNA ( ) or this nice one ( ).

Which technique is used to carry the "other color" along while you work the rows? The ones I saw Amy describe in her videos seemed more for multi-colors on the same row.
