Mother Bear Project seaming

I wish I had looked at KH before I started this bear. I would have used Jan's seamless pattern if I had. However, I am having some trouble with seaming. I am using the pattern in Knitting For Peace. The pattern says, Fold bear in half along the middle of the head section, right sides facing out. Is this correct?

Yes, always seam with the right side up. This way the bulk of the seam will be on the wrong side. Let me know if you need more help.

Thanks, I don't have a lot experience with seaming. I guess I don't understand how to use the mattress stitch on an non-flat object. I would greatly appreciate any help.
