dbl end circular knit
I know to knit each row with circular needles to knit a stockinette,
and assume the same is true of knitting with double ended needles. Is this the case?

Those are called double pointed needles or DPN for short. You use 4 or 5 at a time to knit inthe round. There is a video in the advanced techniques.

Yes, knitting every row in the round with dpns or with circular needles gives you stockinette stitch.
