Do you have a link to the pattern (or is this the one in the book?) or even a pattern name?
If it's knit in sections or strips, yes, seaming the sections will keep the individual pieces from rolling. If there's a border in garter stitch or ribbing or seed stitch around the final edges, that'll help keep the entire throw from curling at the edges.
