Could you just knit a tube that would fit over the foot and as far up the leg as you want it to go, top it with ribbing? You could start at the toe with a closed cast on (if you're interested I or someone else could help you with links) or work from the top and Kitchener stitch the toe. If you decide to try and want help or input or anything, start a new thread so you get the attention you deserve. I'd forgotten about this already and I started it.
