Family Circle Easy Knitting is a good one for beginners. Each issue has several patterns that newbie knitters can make, and would want to make!

Creative Knitting also has some pretty simple patterns, in fact, I'm just seaming up a pullover from one of their recent issues. Knit Simple is a new one from Vogue, but with only two issues out so far, I haven't made a decision as to whether or not it's a "beginner" magazine or not. The designs in it do tend to be more timely than the previous two I mentioned.
Interweave Knits and Vogue Knitting are definitely a lot more upscale in pattern style as well as difficulty. I do find them to be invaluable even if none of the projects inspire me, as the articles are always very interesting and informative.
