adjusting a pattern
My daughter has made a request for this purse: http://www.helloyarn.com/miniskulltote.htm and I plan on making it by the original pattern first to get the idea down but my question is she wants it bigger! How do you increase the size of something? Can I just double everything?

I wouldn't double everything unless you want it to be twice the size. To make something wider, add extra stitches when you cast on. To make something deeper or longer, knit extra length. Felting is very forgiving, and you don't have to worry about a bag felting, so it would be pretty safe to eyeball it.

you could intentionally screw it up a bit by using a Bulkier yarn and bigger needles to match guage

just a thought
