I used the Kitchener Stitch to stitch a hood together. Now the hood has a 'point' at the top of the head. Will I be able to round this out when I block it?

In general, yes, though the severity of the point and makeup of the yarn will have some impact on the success or failure. If you are using a natural fiber, you should be fine. If not, it may be a little harder.
