flat knitting on circulars?

how do you knit something flat on circulars? Like in amy's demonstration videos of double knitting and cables...do you just knit from the left needle to the right, then flip it around and knit another row?

Exactly. You knit as normal, then flip it around and knit the back, as if there were no cable attaching the needles.

I'm a newb and have just learned to knit flat things on circular needles. Now I won't use anything else because I'm much less likely to drop stitches with the circulars than with straight needles.
