An edge stitch is an extra stitch at each end, usually worked in st st and used for seaming.
Are you about to begin a pattern stitch? Most patterns include the edge stitch in the pattern, and are pointing out that there is an edge stitch. Sometimes they don't include it in the stitch count, but tell you that pretty specifically.
