How do I add a color?

Hi y'all!!
I'm new to knitting and new to this site. It's a fabulous site and I am so happy I found it

I'm pretty good at knitting and trying to figure things out. However, I've never seen instructions on how to add another color. Can someone explain this to me? The best I can do on my own is to tie on and knot the new color but that leaves a bunch of little tails hanging. I know there's got to be a better way... I hope.
