Ribbing the Cuff

I want to knit my baby a bunting like this.

and Im pretty sure that I can figure it out as I go, and have made a diagram, and have a bunting kinda like it( mine is actually a swaddling blanket) so that I can kinda get a sizing idea as Im knitting...

But I was wondering what stitch would be best IYO? I was thinking stockinette with bulky yarn and maybe a size 11 needle. I was gonna start like this..

The main piece would be knit from the top of the hood down to tip of one of the bottom of one of the footies, then to make the other footie I would pick up stitches and work to the toes of that footies.

Then I would make the lap blanket and what would be the top of the footies as one piece but seperate from the main piece and then stitch them together. Then create the other part of the hood and stitch it to the main piece to create the hood...

Cast on a few stitches to start at the top of the hood, work in stockinette using increases and decreases...

Think it would work??

I think stockinette woul dbe good, because it will have a natural tendency to curl around the baby...
