My pattern says to increase on "each side" every 6 rows, then every 8 rows. Does this mean that I knit front and back for the first and last stitch of the increase row? I have figured mathematically that I will end up with the correct number of stitches this way according to the pattern so I think I am supposed to increase 2 stitches in each row, not 1 stitch in the knit row and 1 in the next purl row (stockinette stitch).

'Each side' means the beginning and end of the row, not RS, WS in this case. As to which inc to use, you have options. Try diff ones on a test swatch to see which one you like the look of best. Some are more obvious than others. Also, avoid making the actual increase in the first/last st if you're going to seam. Helps to do them 2-3 sts in from the edge.
Most garment increases are done at least one stitch in from the selvage. You can do the kfb, or an M1 or any number of increases. Check out the Increase Swatch to pick the one you like best.
