The reason for a brim is so that your hat will not curl up on the edges, as plain stockinette stitch tends to do. If you don't mind the curling, don't do any ribbing for a brim.
Knitting is an art. If, for your weight of yarn, and your taste, three rows of ribbing is plenty, then go for it! Many people like the look of the folded ribbed brim, which is why patterns call for so many inches of it. For a beanie, you may not want a curled edge, and you may not want a folded brim, so do as many rows/rounds of ribbing that appeal to you.
There is no wrong way to knit. Do what makes YOU happy with YOUR sticks and string.
