Knitting without a pattern

I have start knitting recently, although I knew how to knit since I was in school. I have done some bags etc, but now I am knitting a sweater for my daughter.

I live in Cyprus and all the yarns mentioned in patterns I see are not available here. Also I do not like following patterns, I want to be creative. Fot the sweater I am doing, I have calculated the stitches by doing a square with the yarns and some math but I need help to proceed.

Does anyone can give me instuctions (or where to find them) on how to knit without a pattern, that is how to shape armholes, sleeves and neck, how to create a colllar etc?
