I would recommend to put in a life line every 10 or 15 rows so if you do have to frog you only have to go back as far as the lifeline keeping the amount you pull out to a minimum.
Don't be afraid to work with multiple strands. It is done exactly the same way as single strand. I wouldn't say you could do this mindlessly because you do want to make sure you pick up both strands for each stitch, but the lifeline will definitely help. Also, since you will be doing stockinette, pulling out and "running" a dropped stitch then using a crochet hook to pull it back up would also work instead of frogging entire rows.
