I don't know much about sweaters so hopefully someone will help you with that. For hats, it depends somewhat on your pattern, because you will have to cast on more stitches. Depending on the design, this may mean adding another repeat of the pattern, or simply dividing your new CO number by the number of decreases you do per round in the shaping. (IE if you would normally cast on 90 stitches and do 6 decreases, and you cast on 120, then instead of decreasing every 15 stitches your first decrease round, you decrease every 20 stitches... does that make sense?)

None at all if you do a swatch to measure the gauge. You can then adjust either the number of cast on stitches or needle size accordingly.

What do you mean guys don't knit?

Berrocco has 2 Ultra Alpaca - a worsted and UA Lite which is DK. You'll have to work up a sample to see which it is. Does the label tell you the gauge? If its 20sts=4" on size 8 it's worsted; if it 23 sts=4" on size 5, it's the DK.
