How about a larger version of the baby surprise sweater? If you work it with worsted weight or aran yarn with larger needles you could get a sweater big enough for a three year old.

I really like Wendy's Drive Thru...you can make it a pullover or a cardigan...it's very easy and the pattern is written very well...you could do the color or just a solid...although the color in this sweater is very very easy
