How wonderful of you to want to spread the blessings of your knitting.
A good org for our wounded soldiers is:
http://www.rectangle6x9.org/
People knit & crochet 6x9 rectangles of acrylic yarn & donate them to
The Handmade Afghans to Thank Our Armed Forces Project. HAP for short. Volunteers crochet them together making afghans & distribute them to our wounded soldiers. Visiting relatives also benefit from them. The 6x9s can be easy take-along projects, but they must be 6x9" in a relaxed state and of acrylic yarn for washability and no alergy problems.
Another knitting charity for our armed forces is helmetliners:

I've made 3. I like doing them. They must be 100% wool yarn for warmth and safety. I make mine with the neck part more like 7" long. This covers the neck better when they're pulled up over the mouth. There have been a couple of threads about them on this site.
The Charity Knitting part of KH has good ways to help others as well.
Have fun.
