These two don't require dpns, but you have to seam up the bottom. Not a big deal since babies don't worry about walking on a seam.
If you want to attempt dpns, a bootie is a great way to learn since they're so small. Any but the top one (on your list) would be good to try. The first one on your list requires a toe-up sock cast-on, so that might be a bit harder.
