Easy Quick stuff for moms to knit.
I have a 7 month old son, best time to knit is during baby's naps, and at night. Anyway, I've knitted 5 or more bibs as they are super easy and done in stockenett stitch, the regular knitt. I've even finished two patchwork quilts or blankets, just squares of different colors then sewn together. I did the bibs in baby cotton. Currently I'm working on knitting a draw string baggy type thing for my mother.

I have links to the bib, and to the bag, the blankets I kind of just through together off the idea that I'd like to pratice the whip stitch I believe its called. I both blankets were done in washable chenelle (not sure I spelled that correctly) in alternating colors of; white, yellow, green and depending on baby's gender either blue or pink, (I've done one of each one for my son and one for my friend's daughter) then I sewed my son's together with green yarn and the girl's in purple baby cotton.

Sounds like you have your act together! Wonderful!
So nice to take time for knitting during "breaks"!
